COMPANY PROFILE
The Union of Santorini Cooperatives, named as SantoWines, was founded in 1947. Today, SantoWines, the biggest wine producer of the island, has approximately 2500 members that equals to the total number of the producers of the island, while 1000 of them are active.

Wine for us is art, made with love and care…. and for that reason we have gathered all the necessary elements…

We built a new, state of the art winery in 1992 and having as our main concern the continuous improvement of the quality of our wines, SantoWines people, with care and respect for the 3500 years of Santorini wine tradition, create our famous awarded wines Appellation of Origin Santorini of High Quality.

SantoWines social responsibility profile goes along with its corporate strategic view. Our aim is to support Santorini producers and to protect Santorini vineyard and its unique in the world grape varieties.

RESEARCH AND DEVELOPMENT
SantoWines Research and Development Department is participating in special projects seeking the improvement of the cultivation techniques, of the vinification processes and of the products quality.

In Santorini we have created a nursery of indigenous grape varieties so that Santorini vineyard remains genuine and in excellent condition.

CHARACTERISTICS: This is a special wine, yellowish with light golden glow. The aromaw of barrels, vanilla and citrus fruits are dominant. It has a rich mouth, strong body, spicy intense taste and lond after taste
FOOD AND WINE: It matches perfectly with appetizers, grilled meat and light white meat with fine taste sauce or strong flavor cheese.

GRAPE VARIETY: 75% Assyrtico – 25% Aidani
VINIFICATION: the grapes are sun dried for 8 –10 days. Slow fermentation for2 – 3 months. Aging for at least 24 months in oak barrels
AGING: 24 months in oak barrels
CHARACTERISTICS: Amber color with tones of chestnut brown. It has an unusual aroma and an unfamiliar bouquet, where the aromas of aging are dominant. The combination of spices, honey, raisins and lemon flowers are also present. Its intense sweet taste is in equilibrium with its acidity. This round, velvet wine has a rich taste which tricks the mouth between honey and lemon.
FOOD AND WINE: Enjoy it as a dessert wine or accompany it with fresh fruit and light desserts
SERVING TEMPERATURE: 6 – 8 C

CHARACTERISTICS: It is a wine with an unfamiliar bouquet, a combination of spices, honey, raisins and maturity aromas. With a rich and velvety nature, the intensely sweet taste plays joyfully with the acidity of the grape varieties and alcoholic volume

Santowines remains faithful to the traditional vinification technique of Vinsanto and offers you this precious wine..
Vinsanto is made from the indigenous white grape varieties of Santorini: high proportion of the robust Assyrtico with the blend of the aromatic Aidani … The grapes are harvested in early August and are being sun dried for 8 to 10 days. The vinification process, the natural fermentation, like a ritual, are taking place slowly and patiently. Time generously offers to Vinsanto invaluable taste and aromas while it rests in oak barrels in SantoWines cellars.

The 2006 vintage has offered a golden – white precious wine with the aromas of herbs and small white flowers.
FOOD AND WINE : Its taste is full and tender and is perfectly combined with soft taste seafood.

CHARACTERISTICS: The vinification of the ancient local MAGROTRAGANO variety, once again has fulfilled our expectations. MAVROTRAGANO grape variety is cultivated in small quantities; however, the cultivation is based on high standards with great care.
This varietal wine has aggressive taste, with the aromas of spices and tobacco.
FOOD AND WINE : It is perfectly combined with intense taste meat dishes

VEDEMA RED DRY WINE
It is made mainly for Mandilaria grape Variety, which is the main red grape variety of the island. After the typical red grape vinification and the fermentation it is bottled in 6 months.
Vedema Red embraces all the special aromas of Mandilaria grape variety. It has a distinctive mouth and nice finishing taste. It is the perfect choice for grilled meat and spicy dishes


AGERI

Ageri in Greek is the word for the light wind. Aiming to give the wine lovers the sensation of aegean fresh wind, the warm and shiny sky in combination with the SANTORINI volcano breeze, SantoWines has selected from Santorini vineyards the most aromatic grape varieties and vinificated them with joy and care. This is how Ageri was born, a white and rose semi dry wine with distinct character.

AGERI WHITE SEMI DRY TABLE WINE
Santorini’s unique ecosystem gives us excellent local grape varieties like Assyrtico, Athiri, Aidani. Based on the wine making tradition of the island we created Meltemi, this white semi dry table wine of exceptional aroma and taste.
Its character, fresh, aromatic, restless but soft, gentle and nervous ... just like the wind!! It is a robust wine with full body, delicate aromatic character and long aftertaste.
It is served at 10 C and goes with soft flavor dishes like fish, white meat, light cheese and fruit.

AGERI ROSE SEMI DRY TABLE WINE
Santowines combined the two ancient Santorini grape varieties Assyrtico and Mandilaria and after careful vinification and fermentation in controlled temperatures has created Ageri Rose which embraces the colors of santorini sunset and the fresh sense of the wind.
Perfectly balanced with soft acidity and excellent finishing palette, it is perfect as an aperitif but also the best accompaniment for light meat dishes. You will love it with Chinese dishes. Best served at 11 C.

IMIGLIKOS SANTO

SEMI SWEET WHITE WINE

This wine embraces all the aromas of the fermentation because at its pick, the fermentation is interrupted with a brisk cooling. We combine its aromatic blossom with a round sweet flavor and we introduce this fine medium sweet white wine that accompanies perfectly cheese, fruits and desserts. SEMI SWEET RED WINE
This semi sweet red wine is characterized by its vibrant red color along with its distinctive peculiar taste. Its discrete sweetness accompanies perfectly non-ordinary dishes with rich flavors. It may also be enjoyed as an aperitif with fruits and savory cheese at 10 C.


MEZZO

mezzoNATURALLY SWEET RED WINE FROM SUN DRIED GRAPES

Using traditional vinification techniques, matured grapes from the local varieties Mandilaria and Assyrtico are carefully selected and then spread under the hot Santorini sun. The sweet must from these sun-dried grapes is fermented slowly and the wine is then aged for at least 6 years in oak barrels. This Santorini tradition is in your glass to enjoy.
Sweet, smooth and aromatic, this distinctive red dessert wine may be enjoyed alone or with fruit, sweets, cheese or dried nuts at 10 – 12 C

RED SWEET WINE

This wine derives from the dark red indigenous grape varieties like Mandilaria, Mavrotragano and Voudomato. The grapes are being sun-dried for several days and then are fermented together, in accordance with modern wine making theories and practices.
A wine of vivid color and an aromatic bouquet of roses and Easter flowers. Its deep color and its aromatic harmony are accompanied with a complex and balanced taste. It allows for long aging. As a dessert wine, served at 8 C , enjoy it with nuts, chocolate or pastries.


RETSINA SANTO

\From the indigenous grape varieties, respecting the long Greek tradition of retsina wine, with modern vinification technique, we have created Retsina for those who want to try all the famous types of Greek wines.
With a yellowish color and pleasant character, try it with Greek appetizers at 10 –12 C!
