White Eggplant is a traditional crop of Santorini. It is the seed that has come from Egypt (since pumice exports to Suez). Because of the land's specifications is not bitter like other eggplants. Instead it is sweet and juicy and has a less sperms.

It can be cooked fried or grilled.
